Egg Salad Sandwiches

4 Large Eggs, Boiled, Chopped
2 Tablespoons Chopped Chives
2 Tablespoons Chopped Parsley
2 Tablespoons Chopped Bread and Butter Pickles
1/3 Cup Mayonnaise
Lettuce
Homemade Bread (We used Melanie's Carrot Herb Bread; I wonder what you will come up with.)

1: Mix Eggs, Chives, Parsley, Pickles, Mayonnaise.
2: Thinly slice and toast Bread.
3: Coat 1 side of each Bread Slice with Butter. This will keep Bread from getting soaked, although this usually is not a probability as we gobble the Sandwiches up right away.
4: Cover with Egg Salad in the usual way.
5: Serve and eat. (Makes 3 Sandwiches)
